Wild Paloma
This is the spritz stripped back to what matters: Myrlèmon, chilled soda and a wide twist of orange peel. The bubbles open up the wild lemon myrtle, while the orange oils soften its botanical edge and bring out its golden, sherbet-like character.
Light, aromatic and effortless, it is made for long lunches, warm afternoons and that first drink as the sun begins to drop.

The Serve
- The Glass: Fill a tall glass with plenty of fresh, solid ice.
- The First Pour: Add 15ml tequila blanco and 15ml Myrlèmon over the ice.
- The Split: Add 50ml grapefruit soda, followed by the remaining 15ml tequila and 15ml Myrlèmon. Top with the remaining 50ml grapefruit soda.
- The Lime: Squeeze fresh lime directly into the glass.
- The Finish: Give it one gentle stir to bring everything together without losing the fizz.
- The Garnish: Twist a wide piece of grapefruit peel over the glass to release its oils, then drop it into the drink.
The Experience
- The Visual: A soft grapefruit-pink pour with plenty of ice and a bold curl of grapefruit peel.
- The Scent: Fresh grapefruit oils arrive first, followed by lemon myrtle, lime and the earthy character of tequila.
- The Taste: Crisp, bittersweet and refreshing. Tequila gives the drink structure, Myrlèmon adds aromatic citrus and the grapefruit soda brings a lightly bitter finish.
Tropical, sparkling and made for the afternoon.
