It began with a simple love for life and the magic of a long lunch.
For us the beauty of the Italian ritual has always lived in the easy connection made when the afternoon slows down. This is where conversations begin, friendships are formed, and the sun turns into the golden hour. Spirits like Limoncello and Aperitivi have always been the heartbeat of those moments, and with Italian heritage in our DNA, we wanted to bring that same soul home.
The Revelation
But the land here had a different rhythm to share.
For years, we followed the traditional path, attempting to replicate those classic Italian spirits on Australian soil. We failed. We realised that you can't force a Mediterranean soul onto a different coast. To truly embrace our roots, we had to stop looking at the map and start listening to the shoreline. We needed to find the Australian heart of that same citrus vibration.
The Saltwater Journey
We followed the sun. Our search for the "Wild" led us through the *Saltwater Nations, stretching from the iconic shores of **Byron Bay, past our home on the Sunshine Coast, and up to the tropical reaches of **Port Douglas* and the Great Barrier Reef.
In the heart of these ancient lands, we found our hero: *Wild Lemon Myrtle.* A botanical that doesn’t just mimic lemon; it surpasses it. It is "more lemon than lemon," holding a vibration of flavour that is centuries in the making.

To capture this wild intensity, our process is led by a two-time World’s Best Craft Producer. Working within the walls of the World’s Best Sustainable Distillery, we have traded the syrupy traditions of the past for a new standard of purity.This world-class mastery is what allows us to stay at our 26% Pivot. It is the "Goldilocks zone" the precise point where we can protect the delicate native oils and keep the spirit organic and clean, without ever needing synthetic stabilisers or fillers. It is a deliberate choice for integrity, bringing a vibrant taste of Australia to life, with a deep Italian soul.
